Apple Salted Caramel Muffins
A delicious muffin recipe made a little healthier with the add of some shredded apple.

Apple Salted Caramel Muffins
Ingredients:
1½ cups flour 1½ tsp baking powder ½ tsp baking soda pinch salt ¼ cup salted butter, melted ½ cup sugar 1 large egg ½ cup milk + 1 tsp lemon juice
¼ cup apple, shredded
1 tbsp vanilla extract ¾ cup salted caramel chips
Directions:
Preheat oven to 425°F.
In a large bowl, whisk together the melted butter, sugar, eggs, milk and vanilla.
In a medium bowl, sift together the flour, baking powder, baking soda, and salt
Slowly add to the dry ingredients to the wet.
Gently fold in caramel chips and shredded apple. Mix just until combined.
Spoon the batter into 6 lined muffin cups
Bake at 425°F for 5 minutes. Then reduce the oven temperature to 375°F and continue to bake for another 15 minutes or until a toothpick inserted into the center comes out clean.
