Sheppard's Pie

It's fall and that means delicious comfort casseroles. One of my husband's favourites is Sheppard's Pie, and I make mine with a twist.

From my kitchen to yours:

Sheppard's Pie

Ingredients:

1 lb. ground lean beef

1/2 lb. ground lean pork or minced turkey

1 small onion, finely chopped

1/2 tbsp olive oil

1/3 cup warm water

1 tsp salt

1 tsp pepper

1 tsp parsley

1 tsp rosemary

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp thyme

1/2 tsp sage

3 cups mixed vegetables (corn, peas, carrots)

6 medium potatoes, peeled, cooked, mashed

2 tbsp. butter

1/4 cup milk

Directions:

  1. Preheat oven to 400 degrees.

  2. In frying pan heat oil over medium high heat. Sauté onion until soft.

  3. Add ground beef and pork/turkey to the frying pan and sauté until browned.

  4. Drain fat from pan and return to heat.

  5. Add seasoning and water to pan with the meat mixture and cook on medium heat for 25 minutes.

  6. Turn mixture out into a 9x9 inch glass casserole dish (double recipe for 9x11 inch dish).

  7. Spread vegetables evenly over meat mixture.

  8. Whip mashed potatoes with 2 tbsp. of butter and milk.

  9. Scoop whipped potatoes out evenly over veggies and bake uncovered for 20 minutes.

**For a little added zing fold 1 cup of shredded gouda cheese into your potatoes when you whip them.
