Pumpkin Pie
Happy Thanksgiving!! One of our favourite parts of Thanksgiving is the pumpkin pie.
From my kitchen to yours:
Pumpkin Pie
Ingredients:
9" deep dish Tenderflake pie shell
2 large eggs
2 cups pumpkin puree (if you don't grow your own pumpkins you can buy "Pure" pumpkin)
1/3 cup brown sugar
6 tbsp white sugar
1/2 tsp salt
3 tsp pumpkin pie spice (see recipe below)
1 can evaporated milk
Directions:
1. Preheat oven to 425 degrees
2. Remove shell from freezer
3. Beat together eggs, spices, salt, white sugar and brown sugar
4. Mix in evaporated milk
5. Gradually add pumpkin puree
6. Blend until the mixture is smooth
7. Pour mixture into prepared pie shell
8. I like to cut fall shapes like pumpkins out of the second shell and place on top of the pie mixture. If you would like to do this too take the second shell out 40 min early to thaw
9. Bake for 15 minutes then reduce heat to 350 degrees and continue cooking for 50min
10. Let cool completely before cutting
Pumpkin Pie Spice
**Using a whisk or sifter combine the following spices:
3 tbsp ground cinnamon
1 tbsp ground ginger
1 tbsp ground nutmeg
1 tsp ground all spice
1 tsp ground cloves
Recipe makes 1/3 cup of pumpkin pie spice. Store in a dry location in a spice jar for quick use in pancakes, cookies and whipped cream and pies
