Sun-dried Tomato and Mushroom Sauce

Are you looking for a light sauce to have over pasta or chicken? This is an easy, light and tasty sauce that goes great with just about any pasta. While the original recipe was rich with cream and paired with linguine, we prefer my altered version with cheese gnocchi.

From my kitchen to yours...

Sun-dried Tomato and Mushroom Sauce

Ingredients:

3 tbsp olive oil

3 tbsp lemon juice

1 cup mushrooms, sliced

2 tsp garlic, minced

1/4 cup sun-dried tomatoes, chopped

1/2 cup grape tomatoes, chopped

salt and pepper to taste

1 tsp dried basil

300g cheese gnocchi

Directions:

  1. Add olive oil to the frying pan and heat over medium high heat.

  2. Add garlic and sun-dried tomatoes to pan and saute.

  3. Turn heat down to medium heat and add salt, pepper, basil, mushrooms and grape tomatoes sauteing until tomatoes have cooked down (approx 5 minutes).

  4. Precook pasta, and drain.

  5. Reduce heat to low and toss cooked pasta into sauce.

  6. Serve sprinkled with parmesan.
