Lemon Poppy Seed Scones with Lime Glaze
It has been a long time since I have been up for baking and especially new recipes. Lucky for us our little one likes to sleep and lucky for me Daddy loves to snuggle with her in the evenings. This means I get to jump back in the kitchen again. I thought I would try out a safe recipe for my first one.
From my kitchen to yours...
Lemon Poppy Seed Scones with a Lime Glaze
8 servings
Ingredients:
2 1/4 cups flour 1/3 cup sugar 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 2 tbsp poppy seeds 1/2 cup cold butter 1/2 cup sour cream 1 egg
Juice of 1 lemon Glaze 1/4 cup lime juice 1 1/3 cup powdered sugar
Directions:
Preheat the oven to 400 degrees.
Line a baking sheet with parchment paper or baking mat and set aside.
Sift together flour, sugar, baking soda, baking powder and salt. Add the poppy seeds and whisk to combine.
Cut butter into the flour mixture until it resembles sand and then set aside.
In a seperate bowl, whisk together sour cream and egg.
Fold sour cream mixture into the main bowl, mixing just until dough in together.
Turn dough out onto a lightly floured counter. Shape dough into a ball and press into an 8 inch circle.
Using a knife that has been floured, cut the circle like a pie, into equal wedges.
Bake wedges for 15-17 minutes or until lightly golden.
While the scones are cooling, whisk together the glaze.
Once scones are cool drizzle with glaze.
