Guacamole
My husband and I have become obsessed with Avocado. We grill them, chop them in salads, and slice them in egg breakfast sandwiches. Our favourite way to eat Avocado though is in Guacamole. A co-worker sent me her recipe and we loved it!! A big Thank You to Shannon Campbell. I made a few adjustments to account for our tastes and our fear or jalapenos, and it has now become one of our go to snacks.
From my kitchen to yours...
Guacamole
Ingredients:
1 ripe avocado
1/4 cup red onion, diced
1/4 cup plum tomatoes, diced
2 drops Tabasco sauce
1 tsp minced garlic
1 tbsp. lemon juice
salt and pepper to taste
Directions:
1. Slice open and remove the pit from your avocado
2. Slice into the avocado flesh in a checkered pattern, making sure to not cut in to the skin
3. Using a spoon, scoop out diced avocado into a bowl
4. Add tabasco sauce, garlic, lemon juice and salt pepper; mashing avocado as you mix the ingredients together
5. Fold red onion and tomatoes into the avocado mixture
6. Serve with chips or sliced veggies
**I've never successfully learned how to keep the avocado from turning brown so I serve this dip as soon as possible
