Fruit Scones


These delicious and fresh scones are the perfect treat, not to sweet and loaded with fresh fruit.

From my kitchen to yours...

Fruit Scones

Ingredients:

2 cups flour

1/3 cup sugar

1 tbsp baking powder

1/4 tsp nutmeg

1/4 tsp cinnamon

1/3 cup sour cream

2 eggs, beaten

1/3 cup salted butter, cold and cut into small pieces

1/2 tsp almond extract

1 cup fresh fruit, diced (peaches shown in the picture)

Directions:

  1. Preheat oven to 370 degrees and line cookie sheet with parchment paper.

  2. In a large bowl sift together flour, sugar, baking powder, nutmeg, and cinnamon.

  3. In a separate bowl whisk together sour cream, eggs and almond extract.

  4. Cut butter into flour mixture until mixture is crumbly but butter is not melted.

  5. Make a well in the middle of the mixture and slowly add wet ingredients. Stir all of the ingredients together just until combined.

  6. Fold fruit into the mixture.

  7. Scoop batter out with an ice cream scoop and place an inch apart on the lined cookie sheet.

  8. Bake donuts for 25 minutes.

  9. Let scones cool on a wired cooling rack.

To jazz up your scones fold in half the amount of fruit and a 1/2 cup of your favourite nuts or flaked coconut.
