Blueberry Tarts
We love blueberries, especially fresh blueberries which are in abundance in Nova Scotia right now. These delicious tarts are a great, quick and easy dessert

Blueberry Tarts
Ingredients:
2 cups blueberries
1/3 cup sugar
1 tbsp. cornstarch
pinch salt
1 tbsp. lemon juice
1 1/2 tsp cinnamon
6 tart shells
Directions:
Prebake your tart shells in a 375 degree oven for 10-12 minutes. To avoid the shell puffing up roll a piece of tinfoil into a ball the size of a small jaw breaker and place in each tart shell.
On the stove in a small sauce pan, bring 1 1/2 cups of berries, sugar, cornstarch, salt, and cinnamon to a boil over medium low heat, stirring continuously to avoid burning. I use a potato masher to crush the berries and speed up the process.
Once mixture is smooth and thickened remove from heat and stir in lemon juice and the remaining 1/2 cup or blueberries.
Spoon blueberry mixture into each baked shell and let sit to cool.
These are extra delicious with a dollop of whipped cream and a sprinkle of cinnamon on top.
