Blueberry Cake Donuts
Ingredients:
2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp cinnamon
3/4 cup buttermilk
2 eggs, beaten
2 tbsp butter, melted and cooled
1 tsp vanilla
1 cup blueberries
2 tsp lemon zest
Directions:
Preheat oven to 375 degrees and grease your cake donut pans.
In a large bowl cream butter and sugar.
Add eggs, buttermilk and vanilla to creamed mixture and beat until smooth.
In a separate bowl whisk together flour, sugar, baking powder, cinnamon and lemon zest.
Slowly in add dry ingredients to wet mixture.
Fold blueberries into the mixture and spoon into a piping bag (I use a plastic bag and cut one of the corner tips to pipe batter)
Pipe batter into each donut cavity, filling each cavity 3/4 full.
Bake donuts for 10-12 minutes.
Let donuts cool in the pan for 5 minutes before transferring them to a wired cooling rack.
To jazz up your donuts dip each in a simple lemon juice icing sugar glaze (Whisk together 2 cups of icing sugar and 1/4 cup of lemon juice)
