Chocolate Cake with Boiled Icing
A favourite treat in our house is my Mom's Chocolate Cake with fluffy Boiled Icing. It tastes just like a delicious s'more without the graham cracker.

Chocolate Cake with Boiled Icing
Ingredients:
Cake:
3 cups flour
2 cups sugar
¾ cup cocoa powder
2 tsp baking soda
½ cup oil
2 tbsp white vinegar
2 tsp vanilla extract
2 cups cold water
Icing:
⅓ cup water
1 cup sugar
¼ tsp cream of tartar
2 egg whites
1 tsp vanilla extract
Directions:
Cake:
Preheat oven to 360 degrees and line cake pan(s). Makes a 9x13 inch sheet cake, 10 inch bundt cake, or 2 thin 9 inch rounds.
In large bowl sift together flour, sugar, cocoa powder and baking soda.
Make three wells in the dry mixture.
Add oil to the first well, add vanilla to the second well and add vinegar to the third well – don’t stir yet.
Pour cold water over the top.
Stir, mixing until just incorporated.
Pour batter into prepared pan(s).
Bake for 1 hour or until tester comes out clean of batter.
Let cake cool completely before icing.
Icing:
In a large saucepan, bring water, sugar and cream of tartar to a boil over medium-high heat, stirring constantly.
Let mixture boil until sugar has dissolved, creating a syrup.
In a mixing bowl, beat egg whites while slowly pouring in syrup.
Add vanilla and continue whipping until mixture forms stiff peaks.
