Italian "Wonderpot"


Want a delicious meal without a lot of fuss? Try this one pot wonder. You can completely customize this recipe to your tastes. The picture above is this recipe made with my favourite penne pasta and yummy lobster meat.

From my kitchen to yours...

Italian Wonderpot

3 cups broth (vegetable, chicken or beef depending on the protein you choose)

1 cup protein (tofu, chicken, pork, steak, shrimp, lobster, etc.)

2/3 box pasta (fettuccine, penne, bowties, etc.)

2 tbsp olive oil

1 cup spinach, chopped

1 can fire roasted tomatoes, chopped

1/2 cup yellow onion, thinly sliced

1 small zucchini, sliced and quartered

1 cup mushrooms, thinly sliced

3 tsp garlic, minced

1 tbsp italian seasoning, dried

3 tsp oregano, dried

1/4 tsp red pepper flakes

ground pepper to taste

1. In a wok or saucepan, heat olive oil over medium heat. If you are using tofu, chicken, pork or steak add the meat now and saute.

2. Once the meat is browned add onion, mushrooms, garlic, seasoning and spices. Let cook until the onion is translucent.

3. Add broth, spinach, tomatoes, zucchini and pasta.

4. Make sure everything is covered by liquid, place the lid on top of the work/pan, and let pot come to a full, rolling boil over medium high heat. Stir occasionally to keep ingredients from burning to the bottom and pasta from clumping together.

S. If using lobster or shrimp add to the mixture just before the pasta is cooked.

6. After the pasta is cooked, remove the pot from heat.
