Peanut Butter Cookies
Over the past few weeks I have taken a step back from my baking to grieve the loss of my father. A man who enjoyed my baking and cooking I found it very difficult to do so without breaking down. But after a few weeks I have regained my joy of working in the kitchen. These Peanut Butter Cookies were one of my father's favourite treats.
From my kitchen to yours:
Peanut Butter Cookies
(Makes 4 1/2 dozen medium sized cookies)
Ingredients:
1 cup real butter, softened
1 cup kraft whipped peanut butter
3/4 cup sugar
1 1/4 cup brown sugar
2 eggs
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp sea salt, ground
Directions:
1. Pre-heat oven to 375 degrees and line a cookie sheet with parchment paper.
2. In a bowl whisk together flour, baking powder, baking soda, and salt.
3. In a separate bowl, cream butter, peanut butter and sugars.
4. Beat in eggs to creamed mixture one at a time until well blended.
5. Fold dry ingredients into creamed mixture until well blended.
6. Using your hands grab a small amount of dough, roll into a ball and flatten on the cookie sheet with a fork.
7. Bake for 10 minutes, and allow to cool 2 minutes on the cookie sheet before transfering it to a cooling rack.
