Mediterranean Herbed Chicken Gyros
Tired of all this snow and need a reminder of warmer days ahead?
From my kitchen to yours:
Mediterranean Herbed Chicken Gyros (makes 2 wraps)
Ingredients:
2 Greek Gyro Wraps
1 Chicken Breast
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Italian Seasoning
1/4 cup Cucumber, diced
1/4 cup Tomato, diced
1/4 cup Bell Pepper, diced
1/4 cup Purple Onion, diced
4 tbsp Tzatziki
1/3 cup Feta Cheese, crumbled
Directions:
Preheat oven to 400 degrees
Place Chicken Breast on a cookies cooling rack in a cookie sheet. Season Chicken Breast with paprika, Garlic Powder and Italian Seasoning. Fill cookie sheet half full of water. Place pan in oven and bake for 30 minutes or until when checked the breast is fully cooked.
Let Chicken Breast stand for 2 minutes before slicing into strips
Warm wraps in microwave for 30 seconds
On each plate place a piece of tin foil. Place wrap overtop of tin foil so half is on the foil.
Smooth 2 tbsp of Tzatziki over each wrap, or more if you like Tzatziki.
Split sliced chicken between the two wraps placing it vertically in the centre. Sprinkle diced vegetables over the chicken to your desired amount, and top with crumbled feta.
Pull sides of the wraps up and cross one over the other. Roll right side of foil up over the wrap and then the left side. Fold the tail under your wrap and enjoy!
