Fluffy Chocolate and Strawberry Pancakes

Shrove Tuesday is always a fun night in our house, and an excuse to have something a little more special then plain pancakes.

From my kitchen to yours:

Chocolate and Strawberry Pancakes

Ingredients:

1 cup Flour

1 tsp Baking Powder

1/4 tsp Salt

1 cup Chocolate Milk

2 tsp Sugar

1 Egg, seperated

1 tbsp Oil

1/2 cup Strawberries, stemmed and diced

Directions:

  1. In medium size bowl whisk together 3/4 cup flour, baking powder, salt and sugar

  2. Add egg yoke, oil and chocolate milk; and mix well

  3. In seperate bowl coat diced strawberries with remaining 1/4 cup of flour

  4. Fold coated strawberries into pancake mixture

  5. Using electric beaters, beat egg white until fluffy

  6. Lightly fold egg white into mixture

  7. Grease pan or griddle and heat over medium high heat

  8. Drop pancake batter by 1/3 cup at a time

  9. Cook for five minutes then flip and cook for another 5 minutes, or until golden brown on each side

  10. Serve with whipped cream and sliced banana or your favourite maple syrup
