Chicken and Rice Soup

Here in Nova Scotia it's our second snow day in a week. After shovelling snow all morning we like to eat warm comfort food.

From my kitchen to yours:

Chicken and Rice Soup

Ingredients:

Chicken bones

1 Carrot, peeled and diced

2 Celery stalks, diced

½ cup Rice (Or my favourite orzo pasta)

1 pkg Chicken Bouillon (packet)

Directions:

  1. In large pot boil chicken bones for 1 hours

  2. Drain over large bowl and pick out meat from bones

  3. In another pot bring broth, meat, carrots and celery to a boil

  4. Simmer for 20 minutes

  5. Add rice and bouillon to pot and return to a boil for another 30 minutes
