Beef Roast (Slow Cooker)
I never grew up watching American Football. In fact I didn't see my first football game until I went to university. My fiance on the other hand grew up in a Patriot home. So Sunday in our house is Football Day, which means he wants meat for supper. If you're like me you want to have some time to relax on Sunday before heading back to work. The amazing and sometimes understated Slow Cooker comes in handy on Sundays. One of my favourite dishes to cook in our Slow Cooker is Beef Roast. It's a great Football Sunday meal and allows me the opportunity to prepare a big meal and still have time for a nap.

Slow Cooker Beef Roast
Ingredients
1 Beef Roast (3-4lbs.)
1 Lipton Onion Soup Mix Envelope
1 can Cream of Wild Mushroom Soup (Campbells)
½ can Water
1 tbsp Cornstarch
Directions
Place roast in slow cooker.
Whisk together onion soup mix, cream of mushroom soup and water and pour over beef roast.
Cover and cook on high for 4-5 hours or on low for 8-10 hours.
Transfer pan drippings to pot and whisk in cornstarch to make gravy.
For a complete meal add quartered potatoes, chunks of carrots and chunks of parsnip 1 hour before the end of the cooking time.
