Molasses Baked Beans

Every Saturday night, for my entire childhood we had molasses baked beans, fried bologna and brown bread. When I finally asked my Mom for the recipe, she had to make them in order to rely the directions and ingredients. It was like the recipe had become a muscle memory.

From my kitchen to yours:

Maritimes Molasses Baked Beans

Ingredients

1 lb. yellow-eyed beans

1 tsp mustard

1/2 cup brown sugar

1 tsp salt

1 tsp pepper

1/2 tsp ginger, ground

1/2 cup molasses

3 cups water

Directions

  1. Cover beans with cold water and soak overnight.

  2. Boil beans for 1 hour or until you can cut through a bean with a fork.

  3. Preheat oven to 350 degrees

  4. Drain beans and place in casserole dish

  5. Add mustard, brown sugar, salt, pepper and ginger to the beans and mix well.

  6. Cover mixture with water and bake for 2 hours

  7. Remove beans from the oven, stir in molasses and bake for 30 to 40 minutes

  8. Make sure the beans don’t go dry
