Cranberry Meatloaf
On these cold winter nights there is something comforting about a meatloaf supper. I never experienced tomato meatloaf until I was an adult. In our house Cranberry Meatloaf was the norm, a sweet and salty mix of deep flavours. Cranberry Meatloaf was one of the first meals I made for my fiance and about every three months he asks for me to make one.

Cranberry Meatloaf
Ingredients
1 lb. Ground Beef, Extra Lean
1 cup rolled oats, large flake
1 pkg lipton onion soup mix
1 ½ cups Whole Cranberry Sauce plus more for serving
Directions
Preheat oven to 400 degrees
Line loaf pan with tin foil
Mix together ground beef, rolled oats and Lipton onion soup mix
Pat mixture into the lined pan
Top with cranberry sauce
Cover pan with tin foil and bake for 1 hour
Remove covering and return to oven for 30 minutes
Slice meatloaf and serve with additional cranberry sauce
** Serve with mashed potatoes and green beans for a yummy and colourful supper.
